Kulfi is a traditional frozen dessert from northern India, considered the predecessor of modern ice cream. Unlike ice cream, it is known for its dense and creamy texture, achieved through the slow reduction of milk and the use of nuts and aromatic spices such as cardamom.

Ingredients
- 30 g sliced almonds
- 40 g shelled pistachios
- 250 g whole milk
- 250 g heavy cream
- 245 g sweetened condensed milk
- ΒΌ tsp ground cardamom

Preparation
- Finely chop the almonds and pistachios; reserve some for garnish.
- In a saucepan, heat the milk and cream over medium heat, stirring constantly until slightly reduced.
- Add the condensed milk and cardamom, mix well, and cook for a few more minutes until thickened.
- Remove from the heat, stir in the nuts, and let cool slightly. Pour the mixture into molds, sprinkle with the reserved pistachios, and freeze for at least 6 hours, or until firm.

Unmold and serve well chilled.
