World Recipe: Okonomiyaki

Okonomiyaki is a Japanese pancake-like dish that literally means “what you like, grilled.” It originated in Osaka and is one of the most popular dishes in Japanese street food. It’s versatile, easy, and delicious, with many variations.

Ingredients:

  • 1 cup finely chopped cabbage
  • 2 spring onions
  • 1 egg
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 1 tsp soy sauce
  • 100g bacon slices (or mushrooms for a veggie version)
  • Oil for cooking

To serve:

  • Tonkatsu sauce (or mild barbecue sauce)
  • Mayonnaise
  • Nori seaweed (powdered or strips)
  • Sesame seeds or extra spring onions

Preparation:

  • In a bowl, mix the egg, flour, water, and soy sauce. Add the cabbage and spring onions.
  • Heat a pan with a bit of oil, pour in the mixture, and spread it into a thick pancake.
  • Place the bacon slices on top.

  • Cook over medium heat for 5-7 minutes on each side until golden and cooked through.
  • Serve with a drizzle of mayonnaise, tonkatsu sauce, seaweed, and anything else you like.
