A nutritious, quick, and delicious breakfast to start your day with energy. The combination of creamy avocado, soft egg, and crispy bread is irresistible.

Ingredients:
- 2 slices of whole grain or sourdough bread
- 1 ripe avocado
- 2 eggs
- 1 tablespoon of white vinegar
- Juice of half a lemon
- Salt and pepper to taste
- Olive oil
Optional: sesame seeds, chili flakes, chopped cilantro

Preparation:
- Toast the bread slices until golden and crispy.
- Mash the avocado in a bowl, add lemon juice, salt, and pepper to taste.

- For the poached eggs, heat water in a saucepan, add vinegar, and when it’s almost boiling, stir the water in circles and crack an egg into the center. Cook for 3-4 minutes and remove with a slotted spoon. Repeat with the second egg.
- Spread the avocado mixture on the toast, place the poached egg on top, and garnish with sesame seeds, chili flakes, or cilantro.
