Avocado Toast with Poached Egg

A nutritious, quick, and delicious breakfast to start your day with energy. The combination of creamy avocado, soft egg, and crispy bread is irresistible.

Ingredients:

  • 2 slices of whole grain or sourdough bread
  • 1 ripe avocado
  • 2 eggs
  • 1 tablespoon of white vinegar
  • Juice of half a lemon
  • Salt and pepper to taste
  • Olive oil

Optional: sesame seeds, chili flakes, chopped cilantro

Preparation:

  • Toast the bread slices until golden and crispy.
  • Mash the avocado in a bowl, add lemon juice, salt, and pepper to taste.

  • For the poached eggs, heat water in a saucepan, add vinegar, and when it’s almost boiling, stir the water in circles and crack an egg into the center. Cook for 3-4 minutes and remove with a slotted spoon. Repeat with the second egg.
  • Spread the avocado mixture on the toast, place the poached egg on top, and garnish with sesame seeds, chili flakes, or cilantro.
